TIKI STYLE IMPERIAL SOUR ALE
For this addition to our Beach Club series, we present to you the JUNGLE BIRD!
We built the grain bill for Jungle Bird with more caramel forward malts to really try and replicate some similar flavors you get in dark rums, then added milk sugar for a thicker mouthfeel and Blackstrap Molasses to really bring out the defining character of this tiki cocktail inspired Imperial Sour. In the fermentor, we added copious amounts of bright pineapple, pithy blood orange, jammy raspberry, and fresh squeezed lime juice to showcase the star components of the cocktail. (Pineapple bringing tropical softness, blood orange and raspberry to replicate the fruity and bitter qualities of Campari, and lime to round it all out with a bright, citric acidity)
After a night of imbibing some actual jungle bird cocktails to compare the flavors, we couldn’t be more pleased with how this big sour has turned out. Tasting notes of fresh cut pineapple, fruity blood orange pulp, zippy lime zest, and the perfect amount of caramel and blackstrap meet to match the acidity of this sour and give you a tiki cocktail in beer form.
